Yields1 Serving

 1 Surmai/Mackeral whole fish
 Salt To Taste
 1 tbsp Red chilli powder
 1 tbsp Turmeric powder
 ½ cup Cashenuts
 5 Green Chilies
 810 Garlic Cloves
 1 inch Ginger
 1 cup Mint Leaves
 1 cup Coriander Leaves
 2 tbsp Olive oil

To make Baked Surmai /Mackeral in Pesto Sauce Firstly wash and pat dry the mackerel(surmai) fish and make slits onboth the sides.

Gently rub in the salt on both the sides,drizzle some lemon juice.

Apply red chilli powder and turmeric powder as well,keep aside the fish for some time.

In a mixer grinder add cashenuts,green chilies,garlic cloves,ginger,salt to taste,mint leaves,coriander leaves, olive oil.Blend the mixture to smooth paste.

Now apply the paste to the fish,rub it well on both the sides.

Bake it in preheated oven at 180 degree for 25 to 30 minutes or till done.

Remove and Serve with rice or roasted veggies.
