India is such a Hodge-podge of so many regional cuisines and equally easy and complicated dishes across all these cuisines. Every region has at least one chicken curry to boast of. Easy Chicken Curry- Punjabi style is a delicious chicken curry fragrant with a special blend of spices, flavored with dried methi that is so easy to make and go so well with rice or rotis It is an one chicken curry recipe which you can make for your everyday dinners or when you have sudden guests at home. chicken curry Punjabi style with extremely addictive flavors and a hot favorite in our home simple to make without elaborate preparation or a long list of ingredients.The flavors are perfectly balanced and the chicken succulent and moist.This treasured chicken curry recipe is what my mother cooks on many a Sunday. She will serve this either as a side for steamed rice or a flavored rice or parathas. The delicious blend of spices along with fried chicken pieces in tomato gravy makes up for incredibly pleasing recipe.

 800 g Desi Chicken on bone
 1 tbsp Ginger Garlic paste
 1 tbsp Red chilli powder
 ½ tsp Turmeric powder
 Salt to taste
 1 tbsp Lemon juice
 ½ cup Ghee
 5 Green cardamom
 2 Black cardamom
 6 Black pepper
 5 Cloves
 1 stick Cinnamon
 2 Bay leaves
 45 Onions, chopped
 1 tsp Ginger Garlic paste
 1 tsp Red chilli paste
 2 tsp Coriander powder
 1 tsp Garam masala
 4 Tomatoes, chopped
 4 cups Water, boiling
 1 tbsp Dry fenugreek leaves
 1 tbsp Coriander leaves
Chicken Marination

For this chicken curry, I have used desi chicken, as desi chicken is better than normal pharma poultry. The chicken has more good taste than the normal taste of native chicken so I have used or else you can use broiler chicken as well

whether you use country chicken or broiler chicken, marination of the washed chicken pieces is important now you need to marinate the chicken by adding ginger garlic paste 1/2 tsp Turmeric powder 1 tsp red chilly powder salt to taste Lemon juice and little bit of ghee.

Mix all ingredients well and keep aside to marinate for 20-25 minutes.

Method for Curry

In another small pan, heat ghee and when its hot add 5 Green cardamom 2 black cardamom 6 black pepper 5 cloves 1 stick Cinnamon this will add good flavor to the curry.

Add finely chopped onions and let the onions fry till golden fry you can add little bit of salt in the pan so that onions get fried faster.

Then add ginger garlic paste, red chillei paste gives good color to the gravy and also adds good taste to the gravy also add turmeric powder, red chillei powder salt to taste and Coriander powder and garam masala powder which is prepared at home mix it well and then add little water so that are masala doesn’t get burnt.

Now add finely chopped tomatoes in the masala little water cover the pan with a lid and let it cook well.

Once the masala start leaving oil add the marinated chicken mix it well cover it with a lid and let the chicken cook.

After few minutes open the lid and add boiled water as per your requirement to make gravy.

Add smashed kasuri methi which will bring good color to the gravy and coriander leaves and bring it to a boil Let the curry sit for 10-15 minutes before serving. Tastes best with rotis or rice.
