Today’s recipe is of Lal Saag. Lal Saag is also known as Red Spinach Or Lal Palak is a protein filled vegetable. It is a powerhouse of vitamins,, minerals, proteins, fibres.and carbohydrates. Its juice extracted from Lal Saag help in treating diarrhea. Regular consumption of Lal Saag helps in easing digestion and weight management. As it is high in iron content and dietary fiber, it is good for cholesterol and risks of cardiovascular diseases. This highly nutritious and flavorful, this saag is very easy to make and can be prepared in very less time. Besides it is not only easy to digest as well. In today's recipe i have shown this recipe just using few ingredients and cooked in few minutes so lets see the procedure to make this recipe.

Yields1 Serving

 1 kg Laal Saag (Red Spinach), cleaned and finely chopped
 1 Aubergine, small diced
 1 ½ red Onion, finely chopped
 2 green Chillies
 ¼ tbsp Garlic powder
 1 ½ tbsp Nigella seeds (Kalonji)
 Salt to taste
 1 ml Oil

Cut and remove the roots of Laal Saag (Red Spinach)

Wash and clean the Laal Saag (Red Spinach) in a strainer.

Add Oil into the pan and wait until the oil is hot.

Add Nigella seeds (Kalonji) into the pan and cook for 30 seconds.

Add chopped Onion, green Chillies and cook it till they become translucent

Mix it well and cook it for 2-3 minutes in medium high flame.

Add the Aubergine and mix it properly.

Cover the pan and cook it for another 3-4 minutes in low flame.

Add Garlic powder, salt and stir it well.

Cover the pan and cook it for a minute in low flame.

Add Laal Saag (Red Spinach) and mix it well.

Cover the pan and cook it in lowest flame. Stir occasionally.

Cook them for 8-10 minutes until the Red Spinach and Aubergine are done
