Today, I'm sharing a very traditional form of cooking, chulha cooking. Chulhiwarcha Missal is quite popular in Maharashtra. I have tried this recipe in a very traditional way, and I am so happy with the flavors which got infused in this.
Chulhiwarcha Missal pav is a very famous dish from Maharashtra. It consists of misal (a spicy curry usually made from ushal (moth beans) and pav.
This dish is topped with farsan or sev, onions, lemon and coriander. It is usually served with pav and curd and papad. It is served as a breakfast dish, as a snack or as a full meal.chulivarcha Misal is prepared in part with sprouted sprouts and has less water content and a watery, spicy. It basically has two parts, a thick curry of matki, known as “usual”, and watery gravy also called rassa. Usually people like to mix these two according to their taste and requirement. This Mouth curry or Usal form is prepared using onion, ginger, garlic, and other spices. Misal Pav is a very good breakfast dish as well, in some Maharastrian family, you will find Misal Pav being served as a breakfast dish. If You want to you can also enjoy this Sprout Misal Pav with a cup of hot cup of tea in the evenings, mostly on rainy days if you for want something hot and spicy you can have misal pav. Misal has a spicy flavor in every bite, and it tastes great when it’s dipped with pav as the pav soaks in all the flavors of the curry. So Let’s see the procedure to make this Chulhiwarcha Missal recipe.

For Chulhiwarcha Misal Masala
 ¼ cup Dry Coconut, sliced
 2 tbsp Coriander Seeds
 1 tbsp Cumin Seeds
 1 Star anise
 3 Cloves
 67 Pepper
 1 Stick Cinnamon
 2 Black Cardamom
 1 Javitri
 1 tbsp Fennel Seeds
 67 Dry Red chillies
 2 tbsp Sesame seeds
 A pinch of nutmeg
 2 tbsp Poppy seeds
 1 Piece Ginger
 1215 Garlic Cloves
For Chulhiwarcha Misal Gravy.
 1 tbsp Cumin seeds
 1 tsp Mustard Seeds
 2 Onions, chopped
 1 tbsp Red chilli Powder
 1 tsp Turmeric Powder
 Salt to taste
 3 Tomatoes, chopped
 2 cups Matki, sprouted
 Water
 Coriander, chopped
 Missal farsan.

To Make Chulhiwarcha Misal Masala

Heat a kadai, add sliced dry Coconut, coriander seeds, cumin seeds, star anise, cloves, pepper, cinnamon stick, black cardamom, javitri, fennel seeds, dry red chillies, sesame seeds, nutmeg, poppy seeds .Roast all the ingredients till aroma comes out.

Then add ginger, garlic cloves and roast again.Remove and keep aside.

To Make Chulhiwarcha Misal Gravy.

Now heat oil in the same kadai, add cumin seeds, mustard seeds, chopped onion.Cook the onions till it turns brown.

Meanwhile on a hand pestle place the roasted masala and grind to make fine powder.Remove and keep aside.

Once the onion turn brown add red chilli powder, turmeric powder, salt mix well.

Add chopped tomatoes, add little water and cook till tomatoes are soft.

Now add the ground masala mix and cook the masla completely.

Add sprouted matki and mix well in masla, add boiled water accordingly cook till done.

Garnish with coriander leaves

Serve hot with pav, onions, lemon juice and missal farsan.
