Yields1 Serving
 ½ Cauliflower
 2 Shalgam/ Turnips
 1 Carrot
For Achar Masala
 1 tsp Cumin Seeds
 1 tsp Fennel Seeds
 1 tbsp Mustard Seeds
For Mix Vegetable Achar
 2 tbsp Mustard oil
 A Pinch of Asafoetida
 ½ tsp Fenugreek Seeds
 1 tsp Onion Seeds(Kalonji seeds)
 Salt To Taste
 ½ tsp Turmeric Powder
 1 tbsp Red Chilli Powder

Firstly cut and remove cauliflower florets wash it 2 to 3 times and keep aside.

Peel and cut shalgam into lengthwise. Peel and cut carrot lengthwise into batons.

Now heat water in vessel, add salt, turmeric powder add vegetables let the water boil for 5 minutes.

Strain and keep it on flat surface.Allow to dry in sun for 2 hours.

To Make Achar masala

In a pan add cumin seeds, roast, remove and keep aside.

Do the same with fennel seeds, mustard seeds roast and keep aside.

Now grind all the ingredients together to coarse powder.

Heat mustard oil in iron kadai, add onion seeds, ground powder mix well.

Cover and cook for 10 minutes.
