Pumpkin parantha is an excellent dish made with whole wheat flour stuffed with a mix of cooked grated pumpkin or yellow squash) Indian spices and garlic. This pumpkin paratha in particular is soft, has a different taste and will fulfill your lunch as well. It also makes for a good scrumptious low calorie breakfast. So pumpkin paratha is the best and easiest way to make our kids eat pumpkin. I am sure they wouldn’t even realize that you have added pumpkin to a particular recipe. Pumpkin is remarkable and versatile vegetable which has highly nutritious and particularly rich in vitamin A, pumpkin is a yummy and seasonal fall treat that can boost your health.
Today I am preparing another healthy recipe for your kids that is Healthy vegetable parantha I have given it a name Healthy Halloween paratha. You already know that Halloween takes place on the last day of October mainly in abroad, and Halloween day is celebrated with Pumpkin and this is a pumpkin parantha that will keep your kids healthy and fibrous.
So pumpkin paratha is a perfect paratha that can be eaten on its own or accompanied by any raita or curd or served with a yummygravy/ curry. A perfect low caloric paratha that can be enjoyed. This is one of the diet recipes to many as pumpkins are a perfect vegetable for persons who want to reduce weight. As such Pumpkin has good source of vitamins which is necessary for our day to day energy.
These parathas can be served for breakfast or as a quick snack or even for lunch. You can serve these parathas with a Raita or pickle. This pumpkin ka parathais easy to make. As grated pumpkin sabji is added to the flour. You just have to knead the dough along with herbs and spices. Then roll them and roast them.
This is a nutritious recipe as these flat breads are made from whole wheat flour and pumpkin. You can pair this paratha with some spicy Raita or chutney. It's ideal to pack in your kids Tiffin box. So Let’s see how can be prepare this.

 200 g Pumpkin
 1 tsp Oil
 ¼ tsp Fenugreek seeds
 67 Garlic cloves, crushed
 1 tsp Cumin seeds
 Salt to taste
 1 tsp Red chilli powder
 A pinch of Turmeric powder
 1 tbsp Coriander, chopped
 2 cups Wheat flour
 1 tsp Carom seeds
 Salt
 2 tbsp Fresh cream / Malai
 Water
 1 tbsp Ghee

Firstly to make pumpkin paranthas cut the pumpkin ,remove the seeds and peel the back skin.Cut the pumpkin into small pieces.

In a pan add oil, fenugreek seeds, crushed garlic cloves.Cook till brown

Add Cumin seeds,chopped pumpkin,salt, red chilli powder, pinch of turmeric powder.Mix all the ingredients well.

Now cover the pan and cook till pumpkin softens,

Open the pan check weather the pumpkin is done, add chopped coriander.keep aside and allow to cool.

Now take whole wheat flour in a big plate (parat) or vessel, add carom seeds,salt,fresh cream and pumpkin.Mix everything very well, start gathering all the mixture.

Knead the dough. don't add any water while kneading. the juices from the pumpkin is enough to knead the dough, if the dough becomes sticky, then add some more flour and knead again, if the dough is dry then add little water and knead again.

Now add 1 tablespoon of ghee. knead again into a soft dough.

Keep aside and allow the dough to rest for 10 to 15 mins.

Take some dough in hand roll the dough apply ghee and fold.

Take the dough on a rolling board and begin to roll it with a rolling pin (belan). while rolling, dust some more flour if required. roll to a small or medium sized paratha with the rolling pin (belan).

Place the rolled paratha on a hot tava or griddle.Flip and cook on both the sides

Apply ghee and cook till the paratha is cooked well and you see some golden or brown spots on the paratha .

Remove and serve with pickle.
