Sourdough doughnut, the latest fashion doughnuts made with the discard of the sourdough discard. Generally we use dry yeast to make the doughnuts , but today I have used the discard thats come out of the sourdough starter and tried my hands on this. My journey is not even a month to sourdough and also the discard is young but felt to try my hands on this recipe. My personal experience is that they are the most soft and delicious doughnuts I have ever tasted and also made. I know, lot of them are new to sourdough concept and lot of them are still thinking what am I writing . But the journey of making the mother yeast and then also incorporating the discard in recipes has totally changed the concept of cooking. Recipe Sourdough Doughnut

For the Doughnuts
 8 tbsp Butter salted or unsalted and softened
 ½ cup Sugar
 2 Large eggs, room temperature
 1 cup Sourdough starter or Discard
 ¼ Milk
 1 tsp Vanilla essence
 2 ½ cups All purpose flour/ Bread Flour
 1 tsp Baking powder
 1 ½ tsp Salt
 4 Refined oil for frying
For the Cinnamon sugar
 1 cup Castor sugar
 2 tbsp Cinnamon powder

For the Doughnuts with discard

Butter together sugar and butter together till mixed well with hand blender or stand mixer.

Add the eggs . Whisk them well.

Then start adding the discard and milk along with vanilla essence and whisk till well incorporated.

Remove from the beater and incorporate flour, salt and baking powder and form a dough.

On the other hand , keep oil to heat in a wok.

Spread or dust flour on the kitchen platform and start rolling the dough into flat disc. Cut them into doughnut roundels with the help of cookie cutter. Also cut a small round from center.

Doughnut Step

As the discard is really active, no need to rest the doughnuts. Directly transfer them to hot oil and fry till golden brown in color. Remove on an absorbent paper.

For the Cinnamon Sugar

Mix together castor sugar and cinnamon powder and sprinkle over the doughnut with the help of seiver.
Can also use nutella as I have used to garnish with the sprinklers.
