Taar Gosht is an Indian famous recipe from Rampur district of Uttar Pradesh. ThisTaar Gosht is one of the dish prepared by the Chefs of royal kitchen of Nawabs. The recipe is simple and easy way of cooking. The important steps is preparing a mutton stock and finishing with style of cooking. Taar Gosht is blasting with mildly spicy flavors and is for sure to be a family favorite. It's prepared using mutton trotters/ paya along with spices like chili powder, black pepper powder and garam masala powder this non-vegetarian recipe is sure to make mind-blowing recipe. It is easy to prepare at home you can serve recipe on several occasions like kitty parties, birthday parties, nights and enjoy with your family or friends. It's an easy mutton recipe that can be prepared at home in just about an hour.

 5 cups Water
 78 Trotters/ payas
 Salt to taste
 2 Bay leaf
 56 Green Cardamom
 56 Cloves
 4 Onions, sliced
 Oil
 3 tbsp Ginger Garlic paste
 1 cup Raw Onion Paste
 3 tbsp Coriander Powder
 3 tbsp Yellow Chilli Powder
 3 tbsp Red chili Powder
 1 tsp Turmeric Powder
 2 tsp Garam masla Powder
 Salt To taste
 ½ kg Mutton
 1 cup Curd
 2 tbsp Coriander, chopped

To begin with clean the payas under water and pat dry them using kitchen towel.

Add the trotters/ payas in a cooker add salt to taste cover and cook up o 5 whistles.

In the mean while heat a pan add oil, add bay leaf, green cardamom, cloves, sliced onions.Stir and cook till golden brown.

Remove onions and allow to cool.

Once its cool then grind onions to paste.Remove the paste.

Now open the cooker and strain the stock.

In the same cooker, heat oil add ginger garlic paste saute well.

Then add raw onion paste mix well add salt and cook for 5 minutes.

Then add the brown onion paste mix well and cook till it turns brown.

Add coriander Powder, yellow chilli powder, red chili powder, turmeric powder, garam masla powder, salt to taste. Mix all the ingredients well.

Now add mutton mix well, add curd mix well to incorporate all the masalas.

Now add the paya stock mix well add chopped coriander.

Cover the lid and cook up to 2 to 3 whistles or till done.

Open the cooker garnish with chopped coriander.

Taar gosht is ready to serve.
